Recipe: 380 Calorie Chicken Quesadillas

If you guys don't already know, I'm a super picky eater and it makes planning meals very difficult. With the addition of my sensitive stomach, it gets even worse.
Over the last year or so, Zach and I have narrowed down our recipe list to just a few small meals. We tend to repeat them a lot, so it's imperative that we find ones that work!
After trying a new Mexican restaurant with the other Navy wives, I had a craving for chicken quesadillas. So, we began making them the only way I knew how. We cooked frozen chicken on the stove top, then added it with a handful of cheese, and cooked it between two tortillas.
Eventually, when we bunkered down and started counting calories, we realized that our method just didn't work. One quesadilla was about half of my daily calorie limit and that's way too much!
So, I was determined to figure out a better solution and I did! Now we alternate these 380 calorie chicken quesadillas between lunch and dinner every week! Not only are they low calorie and perfect for picky eaters, but they are extremely easy to make!
Ingredients:
makes 1 chicken quesadilla
- 3 oz of Tyson Grilled & Ready Full Cooked Frozen Chicken
- 1/2 cup of Kraft Mexican Four Cheese Blend
- 1 La Tortilla Factory Smart & Delicious Light Flour Tortilla
- Cooking spray
Instructions:
1. Prepare the chicken in a pan according to the bag's directions. If you are making more than one quesadilla, just weigh all of the chicken together and cook it at the same time.
2. Begin heating your griddle as the chicken cooks. I use this griddle and I set it to 325 °F.
3. After the chicken is finished cooking, begin measuring out the correct portions for chicken and cheese.
4. Lightly spray the griddle with cooking spray and quickly lay the tortilla down on the griddle.
5. Immediately place 1/4 cup of cheese onto one half of the tortilla, making sure to reach the edges.
6. Add all of the chicken on top of the melting cheese.
7. Next, sprinkle the remaining cheese on top. Make sure that the chicken is covered to ensure that the tortilla will stick to the chicken.
8. Fold the tortilla in half and turn the quesadilla over to toast the other side. Once it's as crispy or golden as you'd like, move it to a plate and let it cool down.
9. Cut the quesadilla into wedges and then enjoy!
It's as simple as that! This quick and easy recipe is perfect for all ages!
